How do we not have a food thread yet? Food is my favorite thing. I bet you all have some killer recipes. Nothing brightens my day more than a good meal. Personally, I've been on a ramen kick lately. But I'll post more stuff too.

 
I often have a craving for a grilled cheese, but when I really want to kick it up a notch I go with the inside-and-out grilled cheese. The only difference in the way I make mine is I use American Cheese, specifically Land of Lakes American cheese, on the inside, and shredded sharp cheddar on the outside.

Thanks for that JR, it's given me an idea how to use up all the noodles I have in my pantry 👍😀

¿Cómo es que aún no tenemos un hilo de comida? La comida es mi cosa favorita. Seguro que tienen recetas buenísimas. Nada me alegra más el día que una buena comida. Últimamente me ha dado por comer ramen. Pero también publicaré más.

Hoy comemos ramen en casa. También es uno de nuestros preferidos últimamente. Vente!! Que rico es! Usamos huesos de kobe para el caldo. Los caldos son un mundo y con unos fideos caseros ni te cuento!
Pero claro Lucían es cocinero, así que sabemos que tenemos una gran ventaja con la comida, y el motor de nuestro hogar gira en torno a la cocina. Ahora es invierno y comemos mucho con cuchara. La pequeña de la casa es carnívora hasta la médula. Suele comer carne diciendo: Tengo que aprovechar a comer ahora carne porque no sabemos si en el paraíso comeremos solo verduras. Yo le digo que siempre nos consolaremos con los huevos. Unos huevos con patatas fritas son el remedio de muchos males.

Mayormente trabajo para suizos. Siempre me traen quesos de Suiza y madre mía cuantos quesos hay por esos países! Nos van invitado varias veces por trabajo a comer raclette. Que bueno por fabor!! Somos ratones en casa!!! 😍

Instead of American cheese try Cooper sharp. 😉Sooooooo much tastier.

Cabot's seriously sharp or wickedly sharp or both excellent choices as well but those brands are from Vermont so I do not think our UK friends here will be able to enjoy that variety. 😆

Ever try grilled cheese with mild green chilies?
 
One of my family's favorites is called Beefed Up Biscuit Casserole. I can't find a decent photo of it but its simple. A layer of biscuits on bottom. Hamburger, onion, tomato sauce, cheese, mild green chilies, a bit of chili powder and garlic powder, sour cream all mixed over biscuits. Another layer of biscuits on top and cover with more cheese.
There are some variations but the one my mom used to make is basic and the way I like it. Recipe available on request.

I have not. I'll put it on my list. You can't go wrong with chilies!

Speaking of biscuits. This is what I had today at a place called sugar and spice. While they were not as good as down south, it was a very good breakfast. The eggs were a bit overdone for my taste but still very good.

I will put up a photo . Probably going to make it again in a week or so. It is a delicious and filling winter food. Hamburger and cheese with all the rest. My second favorite food in spite of my urges is beans and potatoes with cornbread. Past that I think I prefer Carne Asasada, California/AZ style, Beans n rice to the side. Them dang Mexicans always interfering with my menu.
 
Subiré una foto. Probablemente la vuelva a preparar en una semana más o menos. Es una comida de invierno deliciosa y abundante. Hamburguesa con queso y todo lo demás. Mi segunda comida favorita, a pesar de mis antojos, son los frijoles con papas y pan de maíz. Además, creo que prefiero la carne asada al estilo California/Arizona, con frijoles y arroz aparte. Esos malditos mexicanos siempre interfiriendo en mi menú.
Por aquí hay unos frijoles muy variados. Mi tierra es especialista en dar diferentes especies. La alubias verdinas, así se llama mi especie preferidas, se come con alejas y gambas. No puedo explicarte lo buenas que estás! 🤤
 
There's a food truck near me that makes some killer tacos birria. Kind of like this. If I was on death row, and I had one last meal, it would be either this or Varsity Chili dogs (Atlanta GA).

 
Speaking of chili dogs. I miss The Varsity so much I have dreams about it.


As the story goes, there was this loser guy. He liked hot dogs, but he wasn't good at anything. They told him, you're a loser. You might as well go open a hotdog stand, because that's all you're good for. He then went out, opened the hotdog stand right across from the school. Today, over 90 years later, that's where the original Varsity still stands.

I wish I knew! I have had only maybe 6 kinds of beans so far. You can do so much. Even to make a Jewish dish like with meat, beans and potatoes is simple but so rich in flavor. Traditionally they would set it on a fire so it would be coals on the Sabbath and still be warm. Are the fish or prawns eaten separate or together? I am still trying to figure out how to eat sardines.

Birria is the latest craze. I tried it and it is delicious but, there is still no substitute for Carne Asada, Baja style with no red sauce. When I moved to Tennessee I learnt that they don't know Indian food and Mexican food is Taco Bell back here. I have yet to meet a Mexican back here who understands the Baja style of food. A small family opened up a small store and it seems to be doing well. They sell Tamales on Saturday which is a blessing for me. At least I have that. I gave up a lot leaving Arizona.
