Lately I have been experimenting with different ice cream flavors- today I made tahini, buttermilk ice cream with tahini ribbons.

I have two other flavors in the pipeline: rose petal with rose water, and rose petal purée ribbons and then after that I want to make Turkish coffee with heavy cardamom spice.

Here are some flavors I want to make over the summer, ingredients availablity willing:

1) Cheddar cheese (melt the cheese into a sauce)- very subtle flavor, no bulky chunks of cheese, no orange color;

2) Feta cheese and Regina cherry;

3) Ash of burnt hay;

4) Young black walnut preserves;

5) Orange nasturtium with orange blossom water;

6) Dandelion, buttermilk, honey;

7) Red chili, mango and lime;

8) Pine nut, pumpkin seed and honey;

9) Rendered pork belly, pecan, sweet potato, maple.

The ideas are endless. Please share any flavor idea you have!!!

Are we still talking about ice cream here? OK, if we're doing pork bellies then I have to toss in Biscuits n Gravy. Otherwise, chawklitt works for me. Back in the late 80s there was a company named Frusen Gladje. They only made strawberry here in USA but I've never tasted better. Evidently Haagen Daz got butt hurt so Kraft Foods bought the company and shut it down. Kraft Foods sucks.

yes rendered pork bellies in ice cream! You won’t even noticed it- the maple will overpower the umami of the pork, it’ll be delicious!

If i were to do chawklitt i’d have to add some spice to it like cumin or sweet chili powder to bring out the notes.

Vanilla is my favorite flavor because it so multi-dimensional. There is a special species of vanilla native to an area in western mexico that is pollinated by special bees native to the area called Melipona bees that make the vanilla really extra special. I was in Mexico City in 2017 what a glorious city that is. I bought some Melipona vanilla there and it was sealed by the art of baudruchage. very special. it went fast.

1) Queso cheddar (derrite el queso en una salsa): sabor muy sutil, sin trozos voluminosos de queso, sin color naranja;

2) queso feta y cereza Regina;

3) Ceniza de heno quemado;

4) Conserva jóvenes de nuez negra;

5) Capuchina de naranja con agua de azahar;

6) diente de león, suero de leche, miel;

7) Chile rojo, mango y lima;

8) Piñón, pepita de calabaza y miel;

Rendered pork belly, pecan, sweet potato and maple. Just when you think you have lived long enough to hear everything, someone comes up with rendered pork belly ice cream. A veritable McBelly. A BurgerBelly with fries. You could try making a Magellan flavour ice cream. I know of at least one customer you would get. I would try it myself too.

Had an interesting ice cream in London a couple of weeks ago. A hollowed out doughnut shell filled with Ube,which is Filipino purple yam. Gorgeous violet colour. They also have Black Coconut and Chocolate Malt.

Black Coconut interests me greatly.

@BARNABY THE DOG. no comment on the burnt hay flavor? hahaha.

don’t knock it till y’a try it! (-:
I get all the burnt offerings I can handle from my wife! She like things “well done”. That works well for crisp roast potatoes, not so well for a nice steak - but handy for plugging a puncture in a tyre in an emergency. Silver linings etc.

“Where in London?”….it’s a big place. You remind me of our airport here in the Margate area of Kent - about 120 miles outside of London. It was originally a world war 2 fighter airport compulsory bought from the farmer for that purpose. After the war, it became a port for light aircraft, and after that, a try was made at going commercial. So they called it “London-Manston” airport and tried landing jumbos and freight - until the travelling public and a lot of enraged Americans discovered that “London” was a further 120 miles away. It went bust quite quickly.
